Pesto veggie pasta- serves about 3 people
Ingredients:
- Any green vegetables eg. broccoli, spinach, courgette, peas, green beans, asparagus, Brussels sprouts, yeah you get the point
- 1 onion
- 2-3 table spoons of Philadelphia or any creamy cheese
- 2-3 tea spoons of pesto- to your taste really
- 1 vegetable stock (in water)
- PASTA (as much as you need)
- Oil
1. Add the oil and cut onions to a pan, leave to simmer
2. Start to cook the pasta
3. Create your stock, pour that in with the onions and leave to reduce down a bit, add the cheese and pesto
4. Add your chosen veggies and allow it all to cook
5. drain pasta
6. SERVE
